The name comes from the Emme river valley in the Swiss Canton of Bern (German: Emmental — Emme river valley. It was first mentioned under this name in 1542. Emmental cheese is made in various countries, as the name is not a registered trademark. Emmental cheese has a characteristic piquant, spicy sweet taste; it is characterized by large cavities due to the peculiarities of the manufacturing process (the release of carbon dioxide by bacteria). In some countries, it is called “Swiss cheese” In combination with Gruyere cheese used to make fondue.
