Cheese is a “live” product. And he, oddly enough, breathes all the time.
Therefore, it is so important to carefully observe all the conditions of its storage.
How to keep cheese longer?
You should not buy more cheese than you can eat in the near future, as it has a short shelf life and requires special storage conditions.
Do not cut the crust off the cheese, it is a natural defense against drying out and is edible in some types of cheese.
Before putting cheese in the refrigerator, it must be properly packed.
Cheese storage packaging
You can leave it in the store packaging if it is a closed vacuum bag or an unopened head of cheese. If the package has already been cut, the cheese needs to be repackaged. In polyethylene, the cheese stops breathing and its taste deteriorates. In the film, it will begin to be covered with a sticky layer already on the 4th day. Packed too tightly, cheese can not only be a breeding ground for bacteria, but it can also absorb odors and chemicals from plastic.

How long does cheese last in the refrigerator?
The shelf life of cheese also depends on the variety. For soft cheese it is several days, and for hard cheese it is months. The harder the cheese, the longer it can be stored. In some cases, like Grana Padano or Parmigiano Reggiano, the product does not lose its qualities for up to eight years.

Can cheese be stored in the freezer?
If you bought more cheese and need to store it for a long time, you can use the freezer. But there is one caveat.
Many types of cheese begin to crumble after being stored in the freezer. The harder the cheese, the better it tolerates freezing. Wrap the cheese in parchment paper or foil and store in the freezer for up to 6 months. To defrost it, transfer it to the refrigerator one day before cooking.
The frozen cheese is no longer suitable for consumption in its pure form, but it can be used for making soups, sauces, pastries and other dishes.

How to store mozzarella?
Transfer the cheese to a container of cold water if you opened the vacuum seal. Change the water every day when storing cheese in the refrigerator. This will mimic the whey the mozzarella is in and will prevent the cheese from drying out.
At a temperature of 1 to 4 ° C, mozzarella will retain its taste for 2 to 3 days.
Never freeze fresh mozzarella. The texture and taste won’t be the same. The best place is the middle shelf of the refrigerator.
How to store moldy cheeses?
If you leave such cheeses as Niva Gold, Regina Blu, Madeta Kamadet without packaging, then there is a risk that the mold will spread to other products, which will cause them to spoil prematurely. Also, an unpleasant odor may appear in the refrigerator.
The storage principle is the same as for hard and semi-hard cheeses. Wrap in parchment paper and place in a container with a lid.
Advice. Remove the cheese about 1 hour before serving. This will help restore the natural smell and taste of the product. Slice the cheese just before serving. Do not store cut food.
